- 2021 Hollow Wines Zuma - This regeneratively farmed Riesling (21 Brix) was cold-soaked whole cluster for five days and pressed into a stainless steel tank where it completed primary fermentation. Subsequently, organic Chenin blanc was harvested at 18 Brix and destemmed and fermented on skins for 7 days before being pressed into a separate stainless steel tank to complete primary fermentation. After racking both the Riesling and Chenin of their primary gross lees, they were blended into one tank and racked into Flex Tank Eggs for maturation and elevate.
- 2020 La Bodega de Las Estrellas Ego Vinum Orange - A Spanish orange wine with extended skin contact and maceration, this wine has rich orange tones. On the nose, fruity tones with a balsamic touch come through, and when tasting, it becomes complex and rich with a long finish and rich aftertaste. From Castilla-La Mancha winery Bodega de las Estrellas, this blend of Macabeo and Airén is fermented in amphorae with native yeasts. With no added sulfites, certified organic, and farmed sustainably, this orange wine is natural and biodynamic. Hand-harvested and selected from small production vineyards.
- 2020 Famiglia Febo Il Rolland - A natural wine made from Pecorino whose deep yellow, rusty color likens to an orange wine but actually, it is due to a hot, dry year in 2020 and rich soil which also impart intense aromas and taste of mature apricots and dates. It is fresh, with a textured mouthfeel leaving you pondering and wanting to have another sip. Fermented and refined in the winegrower's grandparents' concrete vessels. We recommend letting it breathe before enjoying it to the fullest.
